At Mugen, our Forbes Five-Star restaurant, Chef Colin Sato partners with local farmers and fishers to source seasonal, low-impact ingredients. Whether dining downstairs or in-suite, guests enjoy a menu that reflects Hawaiʻi’s bounty with minimal waste.

ECO-CONSCIOUS AMENITIES
